Here are a few essential tips to ensure your chicken fajitas are restaurant-quality every time on your Blackstone:

Uniform Slices are Key:
For even cooking, make sure your chicken andvegetables are sliced into similar-sized strips.This ensures everything cooks at roughly thesame rate, preventing some pieces fromovercooking while others are still raw

Fajitas thrive on high heat. Get your griddle nice and hot before adding your chicken and veggies. Cook inbatches if necessary to maintain that high temperature and achieve a beautiful sear, rather than juststeaming the ingredients.

Layer Your Flavors:
Cook your chicken first to get a good sear, thenset it aside. Cook your peppers and onions untiltender-crisp. Just before serving, combineeverything back on the griddle with yourseasonings and a splash of lime juice for a finalflavor infusion.
Featured Recipe: Sizzling Blackstone Chicken Fajitas
This recipe delivers tender, seasoned chicken and perfectly cooked veggies, ready to be wrapped in awarm tortilla!
Ingredients:
- 1.5 lbs boneless, skinless chicken breasts or thighs, thinly sliced into strips.
- 2 bell peppers (any color), thinly sliced.
- 1 large onion, thinly slice, 2 tbsp olive oil.
- 2 tbsp fajita seasoning (store-bought or homemade blend of chili powder, cumin, paprika, garlicpowder, onion powder, salt, and pepper).
- 1 lime, juiced
Instructions:
- In a bowl, toss the chicken strips with 1 tablespoon of olive oil and 1 tablespoon of fajitaseasoning until evenly coated.
- In a separate bowl, toss the sliced bell peppers and onion with the remaining 1 tablespoon ofolive oil and 1 tablespoon of fajita seasoning.
- Preheat your Blackstone griddle to medium-high heat.
- Add the seasoned chicken strips to the hot griddle in a single layer. Cook for 3-5 minutes perside, stirring occasionally, until cooked through and lightly charred. Remove chicken to a cleanplate and set aside.
- Add the seasoned peppers and onions to the griddle. Cook for 5-8 minutes, stirring occasionally,until tender-crisp and slightly softened.
- Return the cooked chicken to the griddle with the vegetables. Squeeze the fresh lime juice overeverything and toss to combine for 1-2 minutes.
